Single Serving Blueberry Lemonade Spritzer

This is a quick to make, refreshing spritzer for a hot July or August afternoon. Enjoy it by the pool, out on the patio or inside while reading a book. This cool summer drink can be easily made from blueberry puree or frozen berries, thawed and mashed with a little sugar.

It's easy to make! Combine water, blueberry puree or jam, fresh lemon juice, with simple syrup, a handful of berries and carbonated water for the spritzer. If you want to control the amount of sugar, pass on the simple syrup and increase the amount of carbonated water or sugar free 7-Up type sodas. Feel free to make adjustments to fit your flavor palate. It's easy to make...and delicious to drink!

This delicious drink comes out at a beautiful blue-purple drink…just right for enjoying the summer abundance of blueberries. Sub other berries, too, or mix others in with this recipe.

Find a relaxing chair, a wide brimmed hat and a good book…then enjoy a day out in the sun with an ice-cold glass of Blueberry Lemonade Spritzer. Make it a time for yourself to regenerate with a refreshing drink.

If you like a beverage that’s a little more tart, just add a little more lemon juice.

If you like a drink that’s a little less sweet, decrease the amount of sugar or simple syrup. It’s a pretty drink that’s fairly easy to change up a little bit regarding the ingredients.

And, of course, if you would like to add a little kick to it, stir in a shot of vodka, amaretto or tequila. In that case, drink in moderation.

This recipe makes enough for 1-2 servings. For more, just multiple the amount of each ingredient.

Gather your Ingredients:

1 C Water

1 t Lemon juice, fresh squeezed

1 T Simple Syrup, (optional)

3 T Blueberry puree, or fresh mashed berries

¼ C Carbonated Water

Handful of blueberries

Ice

Mix and Serve it up!

-In a pitcher or larger glass jar, mix up the water, fresh lemon juice, blueberry puree, a few ice cubes and cover tightly. Then shake well. (Frozen blueberries can be thawed and mashed with a little sugar to sub for the blueberry puree. Or, blueberry jam tastes very good, too.)

-Pour enough to fill your drinking glass or mug ¾ full.

-Top off your glass with carbonated water. (Sodas including 7-Up or Sprite can easily be substituted for the carbonated water.)

-Garnish with fresh blueberries, add a straw and enjoy out on the deck or patio or alongside your pool with a snack.

Storage:

I like to make this ahead and store in an airtight glass jar in the refrigerator for up to 5 days. I mix it all up to store for a couple days later, adding the carbonation to my glass only when I’m ready to enjoy a relaxing reprieve.

However you enjoy this Blueberry Spritzer, or whoever you want to enjoy it with, “Bake your own Memories!”
