How about a COOL quick and easy NO-BAKE ICE CREAM treat for your Independence Day Celebration?
What goes better with strawberries than chocolate! I’ve combined a top-quality strawberry ice cream containing lots of flavorful pink frozen bits of berries…with red and blue candy wafer melt bottom chocolate chip cookies. These are my homemade chocolate chip cookies that I’ve dipped in chocolate wafer melts (from the Nestle Tollhouse recipe).Then roll the ice cream edges in red, white and blue sprinkles. What Kiddo doesn’t like sprinkles. MMM…MMM…mmm!!!
This is a QUICK and EASY and COOL treat to make for the kiddos for the 4th of July! And, your BIG KIDS will love it, too. It’s a cooling and delicious ice cream treat to cool off on a hot holiday afternoon. Plus you can make them with your favorite ice cream and homemade or bakery bought cookies. If you like, make your own favorite cookies to sandwich the ice cream between.
Start by softening your favorite ice cream. I’ve used my favorite strawberry flavor for mine, and drizzled some chocolate syrup in it.
Gather up two large cookies for each sandwich. If you are making them for 6 kids, gather up 12 cookies. If you have little kiddos, it is just as easy to make these sandwiches with smaller cookies to fit little hands.
Scoop ice cream onto half of the cookies. Press a second cookie on top of each.
Press so a little ice cream oozes out, then roll the ice cream edges in the red, white and blue sprinkles.
Wrap each sandwich separately in plastic wrap and freeze. These are so easy and so delicious!
Now you’re already for a wonderful Independence Day Celebration!
Prepare your pan:
Choose a plastic container or platter to place your sandwiches on, that fits in the freezer.
Gather up your Ingredients for 6 Ice Cream Sandwich Cookies:
-6 Scoops of Strawberry Ice cream, softened
-12 Cookies, large chocolate chip
-Chocolate syrup for drizzle or melted candy wafers
-Red, white and blue sprinkles
-Red and Blue candy wafer melts for dipping the cookie bottoms in
Assemble your Ice Cream Sandwiches:
-Melt about 20 candy wafers or chocolate chips according to package directions.
-Swirl about a tablespoon of red and blue melted wafers in circles on the parchment paper in a flat pan.
-Lay the flat bottoms of each of the baked and cooled chocolate chip cookies in the melted chocolate swirls, pressing down until you can see the color emerging from under each cookie. Then you'll know the melted wafers are spread to the outer edges of the cookies. If you are using smaller cookies, then try it with a little over a teaspoon of melted candy wafers. It's so fun to try! I bet the kiddos would enjoy this step.
-Set on parchment paper on a flat pan and refrigerate for about 10-15minutes to harden the chocolate.
-Set out your ice cream to soften a bit, but not too long.
-Put your red, white and blue sprinkles in a low sided bowl that will be easy to dip the sandwiches into.
-Line up 6 of the Chocolate Chip Cookies on your platter. Very hard cookies don’t usually work well since they can easily break apart. Softer, but not real soft cookies tend to work best.
-Using a large tablespoon or ice cream scooper, carve out a large scoop of ice cream and press onto each cookie.
-Place another cookie on top of each ice cream topped cookie.
-Drizzle chocolate syrup or melted candy wafers on the ice cream.
-Carefully press each of the top cookies down a little so the softened ice cream oozes to the outside edges of the -cookie sandwich.
-Press the ice cream edges of each cookie into the sprinkles, rolling so the sprinkles stick to the ice cream.
-Wrap each ice cream cookie sandwich in plastic wrap, parchment paper or waxed paper and place them all in an airtight freezer safe container.
-Freeze the sandwiches overnight or for at least an hour.
-You can set them out a few minutes before serving in order to soften if you like.
-There…you have some deliciously cool ice cream treats to enjoy on a hot summer day!
Options:
-Offer up an assortment of ice cream flavors in your sandwiches.
-For a variety of flavors, scoop a couple of ice cream flavors into one sandwich.
-Try different flavors of syrup to drizzle on the ice cream. Or, sprinkle with different flavored chips.
-Top each sandwich or insert fresh fruit into the ice cream.
-Roll the ice cream sandwich into your favorite dry and colorful breakfast cereal.
-Try different flavors of cookies – snickerdoodles, peanut butter, oatmeal.
-Try some ice cream sandwiched between your favorite brownies or other sweet bar treats, i.e., strawberry ice cream between two brownies or blueberry ice cream between lemon bars.
-Use different flavored chips or candy melts to dip the flat bottoms of the cookies in. Try mint chocolate to couple with mint ice cream.
Storage:
I like to store my individually wrapped ice cream sandwiches in an airtight container for up to a month…if they last that long without first being found by any ice cream hounds. Let them sit out just a few minutes to soften if you like.
I like to store them for up to a week, but they will definitely keep for up to a month as long as they are wrapped tightly and then stored in an airtight container in the freezer.
