Cherry Chocolate Breakfast Skillet Cookie

 

This Cherry Chocolate Breakfast Skillet Cookie is a stunner! It features fresh sweet cherries, which makes this a summer winner, as well as Chocolate Ganache. Take advantage of the fresh cherries, oatmeal, some dried fruit and flavorful chocolate chips in this convenient and easy to make skillet cookie. And the Chocolate Ganache on top is to die for!


Bake ahead and freeze it for later eating. The smaller skillet of 5-6” diameter size makes it easy to make.


This Cherry Chocolate Breakfast Skillet Cookie with Chocolate Ganache on top is as easier than making a full pan of individual cookies. The cookie dough recipe is pretty similar. And you can create some delicious toppings and garnishes to give yourself some variety if you eat these often. Change it up every couple of days with an assortment of suggested toppings. Now you’re ready to face the day, EVERYday! MMMM…mmm…mmm!


You can even cut back on the fat in the cookie recipe by subbing a mashed banana for the ½ cup of shortening.

 

This recipe makes 4-5 different 5-6” cast iron skillet cookies, depending on the how thick you make each cookie.

 

Preheat the oven to 350F degrees.

 

Prepare your baking pans:

Cut a round parchment paper piece to fit in each of your little skillets. (If you only have one little skillet, freeze the rest of the dough for later baking.) Cut the circle with wings that stick out from under the cookie dough. That will help you lift the large cookie out of the skillet, will keep the cookies from sticking and make clean up much easier.

 

Gather up the Ingredients:

½ C Shortening, white (or ½ C mashed banana)

½ C Butter, soft

½ C Sugar

¾ C Brown sugar

2 Eggs

1 T Vanilla extract

2 C Flour

1 t Baking soda

1 t Cinnamon, ground

2 t Cornstarch

½ t Salt

1 C Raisins, golden

1 C Chocolate chips, semi-sweet or dark chocolate

½ C Cranberries, dried, optional

2 ½ C Oats, old-fashioned 


Gather up the garnishing Ingredients:

30 Cherries, freshly rinsed


Make your Chocolate Ganache:

1 C Chocolate chips

1 C Heavy Cream

 

Make and Bake:

-With an electric mixer, beat the shortening, butter and sugars together on medium speed until light and fluffy.

-Beat in the eggs, one at a time, to combine well.

-Beat in the vanilla extract to combine.

-Sift in the flour, baking soda, cinnamon, salt and beat on low speed until well combined.

-Beat in the old-fashioned oatmeal until well combined, on low speed.

-Stir in the golden raisins, chocolate chips, dried cranberries until well combined.

-Cover and refrigerate the cookie dough for one to two hours to help moisten the old-fashioned oatmeal.

-Split your dough into 5 balls and spread one into each of the parchment paper lined cast iron skillets.

-Bake at 350F for 20-25 minutes. I check them at the 15-minute mark to rotate my pans.

-They will be lightly golden around the edges when done. Do not overbake.

-Take them out of the oven and allow to set on the baking pans for 15 minutes so they continue to bake on the inside.

-Allow the cookies to cool completely before frosting them or adding garnish on top.

-Leave the cookies in the skillets, garnish and serve as is on the breakfast table or flip them out onto a serving plate.

 

Garnish your skillet cookies with Chocolate Ganache and fresh Cherries:

-Place the chocolate chips in a microwave safe bowl and set aside.

-In a microwave safe bowl, heat the heavy cream until just simmering. Do not overheat.

-Carefully pour the hot heavy cream over the chocolate chips, and let sit for 5 minutes.

-Stir the cream and chips mixture until smooth and glossy.

-While still warm, spread your glossy chocolate ganache over the top of your skillet cookies.

-Circle the top of the cookies with your fresh cherries for a pretty presentation. 


Storage:

-Store these delicious Cherry Chocolate Breakfast Skillet Cookies in a sealable plastic bag on the kitchen counter for up to 5 days. Or keep in the refrigerator.

-Freeze the baked skillet cookies in an air tight container for up to a month.

If you like fresh baked skillet cookies, freeze the cookie dough balls. I freeze them for an hour on parchment paper lined pans. Then toss them into sealable plastic bags for up to a month, with a label including the above baking instructions. That way, when you’re ready to bake, you don’t need to search for the recipe. When you’re ready to bake, grab one , let it thaw a little and bake a skillet cookie. Bake them according to above directions. Yum!
